The best quality goat milk begins with healthy goats having the genetic potential for milk production. Disease free animals produce disease free milk.
Proper milk handling keeps milk from contamination. Udders and teats are cleaned throughly before milking. The hands of the person doing the milking are also cleaned before each goat is milked. Milk is quickly milked into clean stainless steel pails, either by hand, or with the aid of a milking machine, then strained through a single use disposable milk filter and cooled as quickly as possible in an ice water bath. Milk produced in this manner remains sweet and good tasting for up to three weeks at refrigerated temperature.
Frozen, this milk can be stored until needed for months. Freezing also provides the added benefit of the preservation of all of the natural enzyme activity and nutrition of freshly produced milk. Transporting frozen milk avoids unnecessary agitation of the milk which can cause an off flavor due to the breakdown of the delicate medium chain fatty acids in the goat milk.
